Cereals and derivative productsIn Lincarque, in the commune of Cestayrols, situated in the centre of the "Albi-Gaillac-Cordes" triangle, a young farmer-baker, Thomas Gelin, has built a real traditional bakery: the Fournil de la Monestarié.
He does everything from A to Z, from the cultivation of the wheat to the baking, to offer you a high quality local and organic product.
The wheat is selected from soft wheat varieties, known as "populations" from the Tarn and the south of France, thanks to joint work with the Pétanielle Association and the Réseau Semence Paysanne. These wheat varieties have been selected exclusively by farmers for thousands of years and have undeniable agronomic qualities as well as nutritional and taste qualities that are well above average.
The farmhouse breads with natural leaven are baked in a wood-fired brick oven.
Thomas offers you semi-complete breads:
- round or moulded loaves of ½ kg, 1 kg, 2 or 3 kg at a price of 4.60€/kg
- special breads in ½ kg (round or moulded)

You can buy the products of the bakery: Tuesdays and Fridays from 5pm to 7pm directly at the farm, Tuesdays at Noctambio in Gaillac from 4pm and at Saveurs Paysannes in Le Séquestre every Friday from 3.30pm
